Lemon Posset

Summer may be over, but I am having a hard time letting go! I still yearn for those long, warm summer evenings that seem to stretch on forever! So while I’m in the spirit of pure denial, I have decided to make some delicious lemon possets.

Sadly, many people skip making the dessert course, often because of the time and the possible risk involved, but these little desserts couldn’t be easier to make! With only 3 ingredients, (lemon, cream and sugar) this posset recipe is prepared in about 10 minutes and almost completely foolproof. There is absolutely no excuse not to try out one of these little pots of joy!

Originally a popular drink in the Middle Ages. Made from warm milk and honey, spiced and flavoured with ale or wine, used mainly as a remedy for colds and a sleep-aid. Posset’s even appeared in Shakespeare’s Macbeth when Lady Macbeth used a poisoned posset to knock out Duncan’s guards.

Possets have come a long way since then, creamy and sweet with a refreshing hit of lemon, it is everything that a pudding should be. Quite simply one of the best desserts you will ever eat, whether it is a warm summer evening or a cold night in on the couch!
