What’s the secret to an amazing fruit crumble? That’s simple; amazing fruit. Now you can make crumble with any fruit you like but for me nothing beats the aroma of piping hot Autumnal fruits with hints of cinnamon with rich buttery crumble filling the kitchen.

Served with a huge scoop of vanilla ice cream or a generous pouring of thick custard, I challenge anyone not to be instantly transported to their childhood when eating this crumble.

Now this doesn’t need to be made in a pan, you could do this in any oven-proof dish you happen to have in the kitchen, but I think it’s quite cool to do so! And this is one pan wonders so… let’s do it.

Apple Pear & Blackberry Crumble.png

For the crumble topping:
75g unsalted butter
25g flour
50g ground almonds
50g light brown sugar
50g flaked almonds
50g oats

2 apples
2 pears
200g blackberries
25g light brown sugar
1/2tsp ground cinnamon
1/4tsp ground clove
1 lemon, zest and juice

Pre-heat the oven to 180°C, gas mark 4. Peel, core and chop the apple & pear into 2cm pieces. Place them into the pan with the blackberries, light brown sugar and ground spices. Mix everything together really well and put to one side.

Place all the dry ingredients for the crumble into a bowl and rub in the butter with your hands, until it resembles rough breadcrumbs. Sprinkle this mixture over the fruit to cover it completely.

Bake in the oven for 30 minutes until the crumble is golden brown and the fruit is starting to bubble. Serve with lashings of thick custard or rich vanilla ice-cream scooped on top.
